Peony Jade returns this year with more contemporary approaches to the autumn season’s much-awaited hairy crab. Using haiy crabs Imported from Yangcheng Lake in China’s Jiangsu province, the latest Hairy Crab menu displays both a great respect for tradition and an enthusiastic nod to the future.
Amongst the different innovative dishes created, the items worth the mention are the Baked Claypot Fragrant Rice with Hairy Crab, Steamed Hairy Crab with Homemade Chinese Ginger Rice Wine and the Pomegranate Hairy Crab Meat Topped with Creamy Golden Roe.
For a substantial choice, the Baked Claypot Fragrant Rice with Hairy Crab (S$72++) is a great rice dish that will definitely satisfy you. A fresh hairy crab is oven-baked in a claypot for 15minutes on a bed of fragrant wok-fried rice that’s bursting with flavours from mushrooms, slice pork and Jin Hua Ham. The aroma of the hairy crab is nicely infused into the rice and that adds a delicate sweetness to the rice.
The extravagant Pomegranate Hairy Crab Meat Topped with Creamy Golden Roe is another dish that one must try. The creamy golden roe sauce adds a luxurious buttery taste to the fresh prawns wrapped within a thin chewy dumpling skin.
What I enjoy was the Steamed Hairy Crab with Homemade Chinese rice wine. I really liked the spicy Chinese Rice Wine soup because it was so satisfying and comforting. The black fungus was very crispy too.
