In Singapore, it is a scene where Eggs Benny and its other gallus domesticus ovum variety dominates the brunch menu. If you are getting sick of the same ol’ rotation of eggs, hollandaise sauce and muffin, then you might want to give FYR Cycene Ond Drinc a shot.
FYR (pronounced like fire) is a casual dining restaurant nestled in the central business district and all of their cuisines are made with Josper Wood Charcoal Oven. The chefs also use lychee wood to infuse the dishes with a wonderful smoky note.
One of the interesting choices you can get in the brunch menu is the Baked Beef Hash. Served in a hot cast iron skillet, the beef hash combines strips of ribeye with corned beef, beans and peppers swimming in a thick stew of tomato. It’s satisfying and a very hearty dish that can be easily shared between two hungover diners.
How about some Grilled Steak & Eggs for brunch? The chefs at FYR puts the Josper oven to good use with this dish. Using a mishmash of baking and barbequing, a combination of cooking methods made possible by the Josper Oven, the striploin was cooked slightly past medium-rare with a hint of smokiness in the flavours.
If you are at FYR, you die die have to try the Baked Pistachio Melt & Pandan Ice Cream. A dessert that plays with heritage flavours that we are familiar with, it comes with a green pistachio lava cake lashed with luscious pandan crème anglaise, paired with a scoop of velvety pandan ice cream. Although I was a little perturbed by the floury end of this dessert, the gooey salty center balanced very well with the cloying crème anglaise while the pandan ice cream was comforting and down-to-earth.
The brunch menu is available every Saturday & Sunday from 9.00am to 3.30pm.
